Rajma Chickpea Protein Salad ( Serves 2 )

  • 1/2 Cup Boiled Rajma 
  • 1/2 Cup Boiled Chickpea 
  • 1/4 Cup Boiled sweet corn 
  • 1 each chopped tomato, onion
  • handful Corinader leaves 

Dressing

  • 1 tbsp olive oil 
  • 1/2 tsp italian seasoning
  • 1/2 tsp Chilly flakes
  • salt to taste
  • 1/8 tsp pepper 
  • 1 tsp lemon juice 
  • Chopped Ginger 1/2 tsp 

Method:

1) Boil Rajma, Chickpea and sweet corn

2) Add chopped veggies and coriander leaves chopped 

3) Mix the dressing in a seprate bowl and pour on the salad and toss. 

*note: Pour the dressing right before having the salad. Dont keep for long after pouring the dressing.
